Cheese and Potato Scones

I love mashed potatoes and invariably make too much every time we have them, but then there are some great things you can make with leftovers and mash is very versatile!

My favourites are these deliciously savoury scones, which are a real hit at supper time – I like to have them warm with a bowl of steaming hot soup.

  1. 250g (10oz) Self Raising Flour
  2. 2 level teaspoons Baking Powder
  3. 50g Butter
  4. 150 g (6oz) mashed potatoes
  5. 100g (4oz) Strong Cheddar Cheese, grated
  6. 50g Butter
  7. A Good Pinch of Salt
  8. Milk to mix
  1. Pre heat the oven to gas 6 (200ºc)
  2. Sift the flour and the baking powder together into a large mixing bowl and rub in the butter. Add a good pinch of salt then thoroughly mix in the mashed potatoes and the cheese.
  3. Add enough milk to bring the mixture to a soft but not sticky dough. It's difficult to give measurement as it really depends on how stiff or how loose your mashed potatoes are!.
  4. Roll out the dough to about 6cm (2½") deep and use a 7½cm (3") cutter to cut out the scones.
  5. Place them on a lightly greased backing sheet, brush the tops with a little milk and bake in the centre of the oven for about 25 minutes or until nicely brown and cooked through.
