It’s fair to say that we get through more than our fair share of biscuits in this house! Almost any flavour, we just love them all but our favourite has to be the ubiquitous Chocolate Chip ‘Cookie’ (or biscuits as we prefer to call them!)
There are quite a few choices to be had in the supermarkets when it comes to buying biscuits. Some are very expensive and feel like a real luxury whilst at the other end of the scale there are the cheap and cheerful economy packs. Great for large families and tiny budgets but not the best taste or quality!
So, why bother to make them?
Simply because homemade biscuits will taste so much nicer! And you can be in charge of exactly what goes into them. Lots of the supermarket own budget packs get some good reviews and are not at all bad to eat but you will find the ingredients list is rather long!
With this recipe you will be able to make a batch of superior quality biscuits for around the same price/100g that you would pay for the cheapest budget biscuits that the supermarkets have to offer!
Making your own biscuits at home also means you can have the dough ready in the fridge and can enjoy super fresh biscuits on demand.
Here’s our easy, budget friendly recipe
Easy to make recipe for delicious homemade chocolate chip cookies
- 125 g butter/block baking margerine
- 50 g soft light brown sugar
- 100 g granulated sugar
- 1 egg
- 250 g plain flour
- 100 g plain chocolate, chopped (or use chocolate chips)
- ½ tsp bicarbonate of soda
In a large bowl, cream together the butter/block baking margarine and the sugars.
Add the egg and beat in thoroughly.
Sift together the plain flour and bicarbonate of soda and add to the creamed mixture, mixing together thoroughly.
Finally stir in the chopped chocolate (or chocolate chips) and mix in evenly.
Now, the mixture really needs to be chilled so cover the bowl and pop it in the fridge for at least a couple of hours (or overnight ready for the next day!)
For good even results, weigh out portions of the dough - 25g makes a nice average size biscuit or 35g makes for a nice chunky one!! At 35g you should get about 20 or so biscuits.
Roll each portion into a ball and place onto baking sheets lined with baking parchment. Flatten each of the biscuits into a round. The more you flatten them, the crisper the results so you'll get a crisp cookie that isn't soft in the middle. Leave them slightly fatter if you prefer a softer biscuit!
Preheat the oven to 160°fan/180°/gas 4 and bake in the centre for 12-15 minutes (ovens vary so keep an eye on them!). The cookies should be lightly coloured when done.
leave on the tray for a couple of minutes to cool before carefully moving them to a wire rack to finish cooling. If the cookies are not crisp enough after cooling (or they last long enough to soften slightly during the day!) the can easily be refreshed in the oven for another 5 minutes or so.
If you don’t need or want to bake all of the cookies in one batch then the dough will happily stay in the fridge for up to 3 days.
Once you taste your first, fresh from the oven biscuit, you may find that you get the bug for making lots more homemade cookies/biscuits so you may want to consider these really useful items! We use them here in The Thrifty Squirrels kitchen – a lot ?

Using a scoop will speed up the process, taking out the need for weighing each portion. A set of three like these will allow you to make biscuits of varying sizes so you may like a big chocolate chip cookie with your cocoa…or a couple of smaller ones with morning coffee!
