Place the pieces of chocolate into a heatproof bowl
Pour the cream into a small saucepan and heat until just at boiling point BUT do not allow the cream to boil.
Pour the hot cream over the chocolate and leave for a minute or two to allow the chocolate to melt.
Stir the cream and chocolate together until thoroughly combined
If the mixture cools too quickly before the chocolate melts completely, put the bowl over a saucepan of just simmering water to heat it up gently and stir together until combined.
Remove the bowl from the heat as soon as the chocolate has melted.
finally, add the butter in small pieces and stir thoroughly into the chocolate mixture
The mixture will look quite runny but place the bowl in the fridge for an hour or so until it becomes firm
Use a fine sieve to cover a tea plate with a dusting of cocoa powder ready to roll the truffles
Use a teaspoon to measure out small amounts of the mixture and place them straight onto the cocoa powder
Dust you fingers with cocoa powder to stop the truffles sticking to your fingers and roll each one into a ball. The mixture should make somewhere between 40 - 50 truffles
