A Very Tasty Sausage Flan Recipe

This simple very tasty Sausage Flan recipe comes from one of my favourite cookbooks Cooking Is Fun from Good Housekeeping.

It is incredibly easy, needs only a few ingredients and, although it maybe won’t win any prizes for it’s looks, it is incredibly tasty – not to mention very cheap to make!

For the shortcrust pastry
  1. 100g (4oz) plain flour
  2. a pinch of salt
  3. 50g (2oz) cold butter (or block margarine), cut into small pieces
  4. water to mix
For the filling
  1. 1 onion, diced
  2. 4 rashers streaky bacon, chopped
  3. 1 egg
  4. 350g (12oz) sausage meat - or use about 6 sausages and take off the skins
  5. salt and pepper
  6. you will need an 18cm (7") flan tin, pie plate or sandwich cake tin
Instructions
  1. Pre heat the oven to gas 4 (350F/177C)
  2. First make the shortcrust pastry. Place the flour and salt into a mixing bowl and gently rub in the butter (or block margarine) until the mixture looks like fine breadcrumbs.
  3. Add small amounts of water (about 1 tablespoon at a time) and mix with a round bladed knife until the mixture starts to stick together - don't add too much water or your pastry will be difficult to roll out and tough when cooked, it should not be at all sticky. Use your hand to bring the mixture into a ball then cover with cling film and place in the fridge to rest for about half an hour.
  4. When the pastry is cool roll out so that it is about 3cm (1 1/4") bigger than your flan tin. Line the tin with the pastry then, for best results - and no soggy bottoms!! - blind bake (line with greaseproof paper and weigh down with baking beans) for 20 mins.
  5. While the pastry is cooking you can make the filling.
  6. Put chopped bacon into a frying pan and fry gently until the fat starts to run. Add the onions and cook together until golden (add a little oil if your bacon is particularly lean). Drain on kitchen paper and allow to cool.
  7. Place the sausage meat into a mixing bowl, add the cooled bacon and onion and the beaten egg. Mix well with salt and pepper to taste.
  8. When the pastry flan case is cooked, pile in the sausage mixture, smooth over the top and bake in centre of the oven for 30-35 mins or until the sausage meat is thoroughly cooked through.
Notes
  1. A teaspoon of mixed herbs can be added to the sausage meat if desired.
